It’s not quite danger zone for Christmas but we are fast approaching the point of no return. Between gift giving, gift getting, parties from one side of the family to another (it’s always an interesting challenge coordinating that every year) and meal planning you might blink and forget a dessert or sweet appetizer. Fear not! With just four ingredients and only a few pans you can have this easy and delectable addition to your Christmas/Holiday meal extravaganza!
You’ll have to break out a double-boiler (or saucepan with glass/stainless steel bowl on top) to get these but really it’s not too bad to clean and take care of. So no sweat! Besides that, no baking, just a pan for cooling and this recipe is pretty easily scalable to be doubled or halved quite easily! It really is the perfect last minute treat (or planned ahead!)
So let’s do an ingredient breakdown!
Chocolate chips: Hayley and I prefer milk chocolate for the creamier, sweater milk but go with whatever brand and style you fancy!
Salted Caramel chips: Of course regular caramel chips work if you can’t find the salted ones. (just add about 1/2 tsp salt to compensate). Just of note, it really varies on the brand how effectively these guys melt, so if you can find salted caramel melting chips, you’re definitely in business (likely at a baking shop). If not, fear not, a few slightly un-mixed morsels never hurt anybody.
Shortening: You really want to be sure to add this here. Shortening makes the melty-ness (meltiness?) much more smooth and consistent across the board. Shortening is used over butter since butter has water, which will totally mess up our melty-ness and make it chunky and weird.
Peanuts: Of course we need the peanuts! Also, we used unsalted here because that’s what was on hand. Honestly either works, but I feel I have a little more control over flavor if I don’t go in with salted caramel and salted peanuts. If you wanna crank up the saltiness (which I can total sympathize with) by all means go for it!
So that’s it! You’ll see in the directions that aren’t any more complicated than the ingredients and you’ll be basking in sweet, tasty, chocolaty caramel goodness in no time! Heck you might even have time to spare to make some hot chocolate (Which I have a great recipe for!)
Easy-Paasy Salted Caramel Chocolate Peanut Clusters
Delicious easy to make and scrumptious chocolate peanut clusters!
- 1 cup milk chocolate chips
- 1 cup salted caramel chips
- 1 1/2 cup peanuts (unsalted)
- 2T 2tsp Shortening
- Step 1 In double boiler melt chocolate chips, shortening and caramel chips.
- Step 2 Mix in peanuts completely
- Step 3 Spoon by the tablespoon onto baking sheet lined with wax paper.
- Step 4 Cool for 10-15 minutes until solid.
